Homemade Lasagna!

Who doesn`t love comfort food? My favorite thing to eat (when i have the patience to make it) is Lasagna. But lasagna is only #3 in my heart where Mashed potatoes will always be my #1 with soup following #2. Since I don`t eat red meat anymore, I decided to do a veggie version and it was super yummy! I threw in some eggplant, zucchini, onions, spinach, mushrooms, ricotta cheese, parmesan cheese, and monterey jack cheese so it was COMPLETELY loaded. It was so full that it started boiling out of my baking dish. LOL

So i got a little carried away, but it was so worth it. I used a spicy pepper tomato sauce and I added some milk in it to make it a little creamier. I wish I could give you a recipe but I make it different every single time.

But one thing that I always use is :
1 pint ricotta
sheets of Barilla no bake lasagna noodles (i make sure the noodle is completely saturated in sauce to prevent any `crunchy` pieces)
frozen spinach
half a box of mushrooms

The rest you can fill in as you go. I like my tomato sauce less tangy so I always make sure to throw in some sugar. Sounds crazy, but trust me! It works!
