I`ve tried making kimchi once and sad to say, I failed miserably. The kimchi turned out bland and tasted no where near authentic kimchi. It was extremely discouraging because I spent hours and quite a bit of money sourcing for the precious imported Korean red pepper powder which was extremely rare in Malaysia. It has been a year since I made my first batch of kimchi and today I summoned all my courage to try making it again. I made a smaller batch this time so hopefully it will turn out ok!:) While I am typing away, my kimchi is fermenting in the jars that I`ve placed them in, we`ll see what happens in a week. Wish me luck!!:)
