My mom made this Hansen-Jensen cake today and it has been my favourite ever since. She didn`t make this cake in a while but she wants to make it for an upcoming birthday party so this was kind of a trial baking. Usually the cake is made with gooseberries but we substituted them with strawberries. You will have to prepare two cake layers which are then topped with beaten egg whites and almonds. In the middle are fresh strawberries and a whipped cream with mascarpone. My mom added vanilla sugar and you could really taste the vanilla, so yummy! I had two slices just now and I feel kinda full but it`s so worth it because this cake is delicious!
