Homemade General Tsos Chicken amp Fried Rice!

This is my homemade dinner from Saturday. I have been wanting Chinese food for a couple weeks and decided I was just going to make it. I had picked up a jar of General Tsos chicken sauce at a new grocery store 2 weeks ago and had it in the cabinet awaiting my use. I also had seen a recipe online for healthy baked chicken nuggets, so I decided to take that idea and morph it into my own by making it General Tsos chicken. Since I was making General Tsos I did not want the chicken to have a strong Italian flavor and since I had plain bread crumbs in the cabinet, I used those to bread my chicken but added in some Italian seasoned panko bread crumbs just to give it a little more crunch than the regular bread crumbs would. Heres what I did with the chicken: I cleaned it and cut it up into chunks then put it into a bowl, poured 1 tablespoon of olive oil onto the chicken and mixed it up, adding in some sea salt and black pepper for flavoring. I then dredged the chicken in 1/3 cup golden bread crumbs (plain) and ¼ cup panko bread crumbs. I then put some black pepper, sea salt, garlic powder and a pinch of Italian seasoning into the mixture and stirred it in, then single handedly dipped the chicken into the mixture, then laid it on a Pam spritzed baking sheet. I cooked them through at 400 for almost 15 minutes, then flipped and cooked for another 10 after spritzing the chicken with Pam again. When done I sprayed a skillet with Pam, added my cooked chicken to it and scooped in8 tablespoons of General Tsos chicken sauce into the mixture, tossing to coat and warm through. When done it was served immediately. I made my vegetable fried rice, following a recipe I have been using for the last, almost two years. Its a recipe by Hungry Girl (http://www.hungry-girl.com/newsletters/raw/1267). I cut up my mushrooms, scallions, bean sprouts and set aside. I cook my egg beaters in a separate pan because it makes it easier instead of taking the eggs out and having to clean the pan because egg beaters like to stick to surfaces when being scrambled. I mixed together my fried rice sauce and set aside. I cook my brown rice the day before and leave it in the fridge for it to get cold. I ALWAYS include white onion in this rice but I chop my onion up, put a teaspoon of water in a bowl and microwave it for about a minute and 20 seconds, until theyre soft. I then follow the directions as it states, cooking my mushrooms, peas & carrots through, then removing from the flame and crisping the rice. I did use 3 cups of cooked rice instead of 2 and it came out fabulous. I have shared this meal with a lot of people over the last 2 years and everyone has always said how stand out this rice is. To go along with the whole I`m eating at a Chinese restaurant vibe I made some steamed broccoli. My local Chinese restaurant sells general tso`s chicken with steamed broccoli on the side of the dish. Overall, it was a GREAT meal and itll be one Ill definitely be making again soon!
