Last weekend I had a little craving for Chinese food, but didn`t really want resort to Chinese take out. So I looked around for ingredients in my kitchen and realized I had everything I needed to make General Tso Chicken.
I love experimenting with cooking, especially when it comes to certain Asian dishes. Although dishes like these require a lot of different ingredients and more prep work than I`d like, in the end it`s usually well worth all the work.
The first step to this dish is to cube up the chicken breast pieces and marinate them in Shaoxing Wine for 15 minutes (this helps keep them very tender while cookine). After marinating them, toss the cubed chicken pieces in Cornstarch and deep fry the chicken pieces in oil until a light to medium brown.
While the chicken pieces are frying, toss together the following ingredients for the sauce:
2 1/2 3 tablespoons Chinese rice vinegar
2 1/2 tablespoons soy sauce
1/2 tablespoon dark soy sauce
1 teaspoon Hoisin sauce
1/4 cup water
2 1/2 tablespoons sugar
1/2 tablespoon Shaoxing Wine
1 scant tablespoon corn starch
After the chicken has finished frying, strain and drain all of the excess oil. Heat up a wok on high with oil and toss in ginger, garlic, and dried chilies. Pour in the sauce mixture and let it boil. After boiling, add the fried chicken, and you`ll see the sauce reduce and start to thicken up around the chicken.
Once all of the chicken has coated and the sauce has reached your desired consistency, turn off the heat and serve.
