Garlic mashed potatoes are one of the best variations of mashed in my opinion then again I am a huge lover of garlic (thankfully, so is my boyfriend). I decided I was going to be making meatloaf for dinner on Friday and whats a better side with meatloaf than potato? Well, I didnt want to make roasted potato which is what I usually have with meatloaf and I was in the mood for mashed, so I decided to make garlic mashed since I havent had them in a very long time.
Garlic mashed is simple to make, you peel your potatoes and add in peeled, cut in half cloves of garlic. To make this (I used about almost 2 pounds of potato) I used 4 cloves. I boiled them together and when done, drained and mashed. I added in some chicken broth, fat free sour cream, a little bit of butter, a drop of skim milk, salt, and pepper. Since I dont load it up with butter and milk as most do adding in some wetness (chicken broth) really helps keep the potatoes moist. I actually had some reheated today for lunch and the potatoes were fabulous, they didnt get hard and block-like as most of the mashed I make tend to get if I dont put the chicken stock in it. Its a really great flavor, not overwhelming. I do like to make this with red skinned potatoes because I can leave the skins on and it looks a lot more festive.
