Since it was a long day of work I wasn`t in the mood to cook anything. However we had leftover vermicelli noodles so I decided to do something quick and simple. I fried up Eggrolls, chopped Roman lettuce, chopped cucumber which are buried under everything and used the marinated carrots my lovely made.
Here`s what everything looked like before I are it. The vermicelli noodles are also hidden behind the Eggrolls. I had this with fish sauce which is what I always eat it with.
