I am really blessed to have a friend who makes the best egg roll in the world! Even the lady who owns an Asian restaurant loves my friend`s egg rolls! I know her recipe and I`ve seen how she makes it but mine never come out as tasty as hers. Sigh, I wish I can stay right next to her because I love everything that she makes :) Her secret to having crispy egg rolls is to always air them out and never ever cover them so that the egg rolls don`t get `steamed` and turn soggy. I have applied this method to most of my fried food and I must say it works!!=)
