Over the weekend, my boyfriend made me some coconut chicken soup for the week.
We actually bought the soup pack from T&T. Soup packs are very convenient as they include all the necessary ingredients you need to make the soup and all you do is boil it.
This soup is specifically designed to help keep the "cold" air out of your body, according to Chinese medicine and replenish the natural moisture levels as well as promoting digestion. The ingredients that help with this are the red dates, the white lotus seeds and as well as the chicken itself. Adding some pork helped to increase the fat content of the broth to make it more hearty and nutrient-filled.
The coconut meat was there to help replenish the moisture levels in your body so you don`t feel groggy.
Overall, this was an exceptionally healthy soup that he made in 3 hours using a pressure cooker =)
