Homemade Chocolate Crackle Cookies
We tried a Martha Stewart Chocolate Crackle cookies recipe! I don`t really care about her time in prison, the woman has some lovely recipes and home decorating tips.
For these cookies you`ll need:
8 oz of dark chocolate, melted
1/2 cup of cocoa powder
2 teaspoons baking powder
1/4 teaspoon salt
1 stick of butter
1 1/3 cups brown sugar, firmly packed
2 large eggs
1 teaspooon pure vanilla extract
1/2 cup milk
1 cup confectioners` sugar
As you`ll see we did make a few adjustments to the recipe, just because we didn`t have some of the exact ingredients. Instead of Dutch cocoa powder, we just used regular cocoa powder. Instead of light brown sugar, we used maple brown sugar. The recipe asked for unsalted butter, but we were too lazy to go out and get new ingredients since we already had most of these things, so regular butter was good enough! Then instead of bittersweet chocolate, we just used dark chocolate chips. These cookies still tasted amazing, so I don`t think these slight changes were that big of a deal.
First, we melted the chocolate chips in a saucepan and set it aside to let it cool. Meanwhile, my friend mixed the flour, cocoa powder, and salt together. I took the softened butter and put it into a bowl, slowly sifted the maple brown sugar in, and beat it together with an electric whisk. Then I added in the eggs, vanilla extract, and melted chocolate. Finally, we mixed in the dry ingredients. After this mixture created a cookie dough, we rolled them out in plastic wraps, so they looked kind of like giant sausages! We put them in the fridge to cool for about 2 hours. Then we took one of the rolls out, sliced 1 inch pieces, sprinkled on the confectioner`s sugar, rolled them into balls, then sprinkled on some more confectioner`s sugar. Then we put them on a sheet, and baked the cookies for 12 minutes at 350 degrees. Take them out, let them cool, and sprinkle on some more confectioner`s sugar if needed.
As you can see, they came out beautifully! They were so soft and flavorful, I really couldn`t stop eating them.
