I stumbled upon this website http://www. last week and have been testing out different recipes on it. So far, the two that I made (this being one of the 2) have been fabulous, so I wanted to share. One thing so many people misconstrue about healthy eating is that you can eat the foods you love, but you have to eat them in moderation, or you can switch out a few items for other ingredients to make it a bit healthier. This is one of those recipes, where you take a classic and change an ingredient or two up, but it still tastes just as great as the original. Since I did not have mini loaf pans (which would have been adorable, BTW) I opted to use the muffin tins and make muffins out of them. The chocolate chip banana bread muffins came out really good and the best part they baked up in 25 minutes. My aunt came over to visit and I gave her one and she said it was good (shes the biggest food critic I know LOL if she didnt like it, or not like one part of it, she would have complained about it for 10 minutes). My boyfriend loved them and I thought they were very good. The mini chocolate chips are a nice twist, because it gives you that hint of sweetness. I think theyd be best warmed with a little spread of butter down the middle , but then again thats how I generally enjoy my banana bread.
