for mother`s day breakfast this morning, i made my mom (and the family) chocolate chip waffles. i used the following recipe from http://allrecipes.com and i just added semisweet chocolate chips!
2 cups all-purpose flour
4 teaspoons baking powder
1/4 teaspoon salt
1 1/2 cups milk
6 tablespoons vegetable oil
2 eggs, separated
1. Preheat waffle iron. In a large mixing bowl, sift together flour, baking powder and salt. Stir in milk, oil and egg yolks until mixture is smooth. In a separate bowl, beat egg whites until soft peaks form. Gently fold egg whites into batter.
2. Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden; serve hot.
if you have a waffle iron, this recipe is ridiculously easy! it takes little to no time to prepare and it`s kinda fun to whip out the waffle maker. i added way too many chocolate chips but i was just experimenting anyways. they turned out quite well!
besides adding chocolate chips, the only change i made was substituting plain no sugar added applesauce for the oil (LOVE this substitution! makes me feel so much healthier :P).
i like how this recipe doesn`t call for sugar or sweetener. the sweetness from the applesauce is just enough without having to add any additional sweetness.
