This was part of my dinner of the night, tonight. I actually cooked for everyone since my mom fell on Saturday and found out Saturday night her hand was broken (at the hospital). Since she broke her right hand, and shes a righty, she pretty much cant do much of anything. So, Ive been helping her out since then cooking and providing her with a meal. She had picked up the stuff to make homemade chicken cutlets, but the stuff just sat in her fridge, so I ended up making them for her.
I dredged the chicken in an egg and milk mixture, dipped it in Italian seasoned bread crumbs and fried in oil. The process was a bit time consuming because I was frying as I was dredging the cutlets, meanwhile also watching the oven since I was baking off cupcakes for my boyfriend and I to frost for Valentines day. We wanted cupcakes for ourselves, but also want to give some out to our family since who doesnt love cupcakes?! We also have some chocolate covered strawberries and pretzels to drop off as well since theyre SO good I need to get rid of them haha. A post on that will be coming at some point!
Anyway, back to this meal! Once the chicken was done, I honestly wasnt even hungry anymore. Just dealing with the meal for the time that I did, I wasnt interested. Funny how cooking can do that to you. A few hours after cooking, I made myself a small sandwich on pita with lettuce and ate that for dinner. It was very good! My boyfriend thoroughly enjoyed them and just ate a few of them plain; my mother ate hers with some sauce on it. My mother originally wanted pasta with them, but I think she knew I was just plain exhausted from running around cooking and baking that she was fine with just the chicken. I offered to make her cheese ravioli or penne, but she said no and thanked me. What a nice daughter, I am!
