Homemade Chicken And Eggplant Casserole

Hello Food Fans
Dinner was so delicious tonight. I made chicken and eggplant casserole. This is a very healthy recipe I discovered while on the southbeach diet. It`s pretty simple and takes approximately 1 hour to prepare. All the ingredients I use are fat free or low fat, non GMO. I promise it taste just as good ( I am referring to ingredients such as cheese)
Chicken (sliced in cubes)
Peppers ( red, green, yellow)
Can tomatoes
Mozzarella ( grated)
Minced Garlic
Melted Unsalted Butter
Parmesan cheese
Chicken Season
Italian seasoning
Other spices optional, depends on how much spice you like...

Peel and cut eggplant into 12 slices
Place slices on a baking sheet and coat lightly with butter, broil until golden then turn over. Again coat with butter and broil till golden. Now add fresh minced garlic to each piece as well as sprinkle Parmesan cheese on top. Cook for 3 minutes or until cheese is set. Set Aside

Now you are ready to cook. Add chicken cubes to heated skillet with just a tad bit of olive oil. Remember we are browning the meat, not frying it. When all the pink is gone add all vegetable ingredients and spices. Don`t forget your canned tomatoes...cover and simmer for 20 minutes....hmmmm smell that....lol

Now we are ready to bake our casserole...use whatever baking dish you have. Lay 6 eggplants ( i only have 5 cause i couldn`t wait i had to eat one..lol) on the bottom, pour your chicken mixture on top, add the other six eggplants and mozzarella to cover the entire top...yum yum
Bake for 20 minutes and lets eat....lol
