This is a post that has been long in the making. I actually made these, almost two weeks ago, and the photos have been sitting on my camera and Im just now getting around to posting about this! Talk about slacker! I had visitors over and I wanted something sweet but I didnt want to make a cake. I had fresh blueberries that I had frozen the night before, with the idea of making blueberry compote. So I decided Id make crepes while they were over! I had the recipe printed out because it was something I wanted to try, so I figured crepes for everyone! I followed the http://www.skinnytaste.com/2008/11/czech-crepes-filled-with-mixed-berries.html here to make the crepe batter, but I used my own recipe to make the blueberry compote. After making the batter I took out my smaller frying pan, coated it with non-stick cooking spray and over a medium flame, poured in 1/4c batter, swirled it around the pan and let it brown. Since I dont have a crepe pen, I used a small dish, slid the crepe out onto the dish, and then returned it back to the pan to cook the other side. The transferring the partially cooked crepe to a plate and transferring back took the most time, but overall, I had all 12 crepes and blueberry compote cooked in 45 minutes and served thereafter. To make my compote, I put the frozen blueberries in a pan (I measured them before I put them in the freezer and it was 3 cups fresh), added in ½ cup water, ¼ cup white sugar, a sprinkle of cinnamon and a dash of salt. Stirring over medium heat, I let it come to a simmer and added in a tablespoon of cornstarch and mixed it until combined and thickened. When done, I transferred it into a bowl and placed on the table for everyone to make their own crepes. To top off the blueberry compote I had a tub of Cool Whip that I placed on top of the blueberries and folded it shut. It was SO yummy! Definitely a hit and definitely something Ill be making again!
