Today, in our house, it is football Sunday. We are enjoying just relaxing at home and my husband and son are watching the game. There are all sorts of foods that are standard for football. I decided to make us a good lunch to enjoy while the game was one. I ended up doing a homemade bbq chicken pizza. I had never made one before. I have tried all sorts of pizzas in the past and they never turn out the way I hope. Often, the crust just isn`t right, the sauce tastes off, etc. Well, this one turned out AMAZING! We will be eating this again, for sure.
I started by baking up 2 chicken breast halves with some grill seasoning. I chose grill seasoning because I like the large granules of the different herbs and such. Once they were cooked through I sliced them VERY thin into bite sized pieces. I also took some help from store bought pizza dough. I chose a thin crust version and prebaked it for about 7 minutes. I removed that and started topping it with the ingredients. I started with some bbq sauce. The kind I used was Kroger`s Thick & Spicy. I really enjoy that one. I think it is delicious. Next, I laid down the chicken pieces. On half of the pizza I put extremely thin slices of onion (I`m talking nearly paper thin). I poured on a bit more sauce. Then, I sprinkled on some gouda cheese that I shredded, some mild cheddar, and some mozzarella. The final ingredient was an Italian herb blend sprinkled over the top. I put the pizza back into the oven for about 11-12 minutes.
The crust was crispy around the edges, browned nicely, and delicious. The toppings were perfect! Everything meshed well together. If you like bbq chicken or have tried bbq chicken pizza, try this version. I really do think you`ll enjoy it.
