I made a batch of Empanadas filled with ground beef and potato not to mention a bit of Spanish onion & green pepper & fresh garlic (sauteed with the ground beef :)).
First I boiled diced peeled potatoes in a separate pot
In a separate pan I browned the ground beef with chosen seasonings (sazon, adobo, garlic powder, Mrs dash, a bit of black pepper and green pepper, Spanish onion & fresh chopped garlic).
* After the meat was cooked thoroughly I added the potato to soak up extra flavor :)
I next laid out some aluminum (for cleaner work space)
where I had the Empanada discs (found in grocer in freezer isle *specialty stores may only carry depending on your neighborhood*)
I folded the empanada disc (when unthawed) and with ground beef mixture in center folded over and used a fork to mash closed (In a half moon shape).
Fried them in another pot filled with vegetable oil for deep fry effect <3
after less than 5 minutes of frying lay on paper towel covered bowl to soak any remaining grease... let cool and enjoy <3
**note filling of empanadas can be what ever you want get creative***
