Today I finally had the opportunity to cook my own meal in SF! I moved roughly two and a half weeks ago, and I haven`t been able to home cook because the person I am renting from has strict regulations on the type of food that is in her fridge. She`s on vacation for the next two weeks so I splurged on the opportunity to cook something that would make me feel more at home.
I had broiled/boiled chicken thighs, with steamed salted vegetables, and freshly sliced mangoes for dessert.
I start by boiling the chicken until it`s almost cooked; Before it is fully cooked, I will salt and season the chicken, and then place the chicken in the oven at 500 degrees. Once the chicken fully cooks it will be filled with flavor and soft because it`s been cooking in its own oils.
This is just a light and simple meal for a hearty day. Glad I could enjoy it on such a beautiful day. (:
