Hodge-Podge Omelette

I`m on something of an omelette kick right now. The other day I shared one that was made with Egg Beaters and filled with ham and cheese. Today, the omelette portion itself was, again, done with Egg Beaters. I have some random ingredients hanging around in my fridge that need to get used up before they go bad....so those things ended up in this omelette.

As usual, while the egg portion was heating I sprinkled it with salt, pepper, garlic powder, and onion powder to give it flavor. Then, I filled it with some sliced mushrooms, spinach, and shredded sharp cheddar cheese. I topped it with a dollop of sour cream.

While this omelette tasted okay, it also seemed a bit bland. I guess I am used to the kick from salsa or picante sauce. Everything that went into this was a mild ingredient, except for the sharp cheddar cheese. I think in the future I`ll either add some salsa or something with heat OR I`ll add my usual ham. It just needed something more to it.
