Healthy Snack: bell peppers

Yesterday while I was making my spinach tortellini soup, I decided to cut up and prep some veggies for snacks through the day. Some of my favorites to have on hand are carrots, celery, broccoli, cauliflower, grape/cherry tomatoes, and bell peppers. I already have celery prepped and in baggies. I had bought 2 bell peppers to cut up and have as snacks.

I just slice them into matchsticks and put them into a ziplock baggie to have easily on hand through the week to munch on. Carrots I can eat alone, but with the peppers I do feel as though I need something to dip them in. I have an organic ranch dip that I like to dip them into. A bit of ranch dressing would be fine, too. Just go easy on the dips!

My son will nibble on the cauliflower and carrots but I`m the only one in the house who will eat the bell peppers raw. I think they`re good! I ONLY eat the red, yellow, and orange ones raw, though. Even cooked, I`m not a big fan of the green peppers. They`re just bitter, in my opinion.
