I stole this recipe from a good friend. She made it to work and it looked so yummy!! It makes the normal humus and pitta bread look and taste much more interesting due to the extra flavors and textures of the vegetables.
All you do is season some vegetables using spices and stock of your choice. Once that is cooked, I layer it with my pitta bread and spicy humus (from Sainsbury). It makes a quick and delicious snack and contains little fat. It also makes a great lunch, for work, school etc.
