Healthified Deep-Dish Cookie Pie!

I`ve been wanting to make this from ever since I discovered her blog. I tried one of her other recipes this past week, and was really impressed with the results. I was not disappointed this time, either! Although my cookie pie doesn`t look as pretty as hers, it tasted *delicious*. You can see the original recipe, but here`s my own version, which I tweaked to suit my preferences: Ingredients:

  • 1 can white beans, rinsed and drained

  • 1/2 cup oats

  • 2 tbsp unsweetened applesauce

  • 1 1/2 tbsp vegetable oil

  • 1 tsp pure vanilla extract

  • 1/4 tsp baking soda

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 1/2 cup evaporate cane juice (you can use sugar instead)

  • 2 squares unsweetened Baker`s chocolate, chopped

I preheated the oven to 350 F, and oiled/greased an 8-inch round pan. Then I put everything except the chocolate in the mixer (using a paddle attachment), and blended it till it was smooth. (The original recipe calls for a food processor, but I don`t have one - using a processor would result in a smoother batter, which would make the beans less detectable. ;) But they are so soft that it doesn`t make too much of a difference.) Then, I stirred in the chopped-up chocolate, and poured the batter into the pan. I cooked it for about 30-35 minutes. The pie was thin, and not really a deep dish pie due to the pan that I used. But I stacked two slices on top of one another, added a little scoop of ice cream (I used my 1-inch cookie scoop - I LOVE that thing, lol), and voila! For anyone that`s interested in calorie counts and such...apparently, a slice of this pie (using the original recipe from Chocolate-Covered Katie) is only 200 calories, whereas a slice of a traditional deep-dish cookie pie is 700 calories. Whoa!!! *_* Not to mention the fact that it`s! I am definitely going to be making this again. :)
