Saturday night this is what I made for dinner. It is a ham and mushroom alfredo that is served over fresh, steamed broccoli florets. It wasn`t hard to make by any means. It was a semi slow process, just because you have to melt down the cheeses on a low heat so they don`t burn... but it isn`t hard. I actually followed a recipe that I found online. You can see that recipe http://www.genaw.com/lowcarb/ham&mushroom_alfredo.html If I remember correctly, I followed it almost word for word. The recipe is just for the alfredo part. They give some suggestions for what you can serve it over and I decided to go with the broccoli. When I make broccoli I make sure I pump lots of flavor into it. Into the water it is steaming in, I season it with chicken bullion, dry veggie seasonings, pepper, garlic, and onion powder. It tastes so good. This was a dish that was satisfying and even though it had a thick sauce full of cheese and milks, it didn`t feel heavy in the stomach. I think it would have felt much heavier had I served it with a rice or pasta.
