1 stick of crusty bread
1L of milk
1 lemon peel
200g of sugar
2 cinnamon sticks
Cinnamon and sugar for sprinkling
Oil for frying
Place in a pan the milk, sugar, cinnamon sticks and lemon peel. Bring to boil and simmer for 2 to 3 minutes.
Meanwhile cut the stick into slices, not very thick and somewhat diagonally skewed, so that the wedges become larger.
Place on top of the workbench 2 soup plates, one with broken eggs and well scrambled, another with a little of the milk mixture.
Dip the bread slices in the milk then the eggs and fry them in hot oil.
To absorb some of the fat put them on kitchen paper.
After fries sprinkle them with sugar and cinnamon to taste.
They serve is generally cold.
