Grilled Seasoned Chicken Salad with side CheeseChicken Quesadilla

My boyfriend and I are making an effort to eat more healthy, so our new record is that we`ve had salad for 3 nights straight for dinner. We changed up our salad and chicken this time though. Last night, we marinated our chicken breasts with chicken seasoning, garlic powder, a hint of curry powder (which is why the chicken is yellow), pepper and olive oil.

What`s in our salad?
- Shredded mozzarella cheese
- Grilled chicken breasts
- Diced tomatoes
- Diced orange bell pepper
- Sliced cucumbers
- Sliced Salami
- Organic Spring Mix
- Cheese & Garlic Croutons
- Romano Caesar Dressing
- Topped with sliced almonds

As our entree, we had cheese and sliced chicken quesadilla. I used a pan to heat up the organic olive oil whole wheat wrap tortilla (purchased from Trader Joe`s), added shredded cheese and heat over high heat for 2 minutes until cheese is melted then added the sliced chicken breasts on top then proceeded to wrap! If only I had salsa, that would completed the quesadillas!

Overall: Dinner was affordable, delicious and more healthy than what we typically eat!
