Christmas Eve Morning, my parents prepared the marinade for the pork and skewered the pork to be prepared to be grilled on the grill! Afternoon, the pork skewers are grilled and looking delicious! To top the meat off, my mom makes a green onion paste (consist of green onions, olive oil). We ate the grilled pork with vermicelli noodles and vietnamese nuoc mam which is fish sauce also contains red peppers/garlic.
Christmas Day, left overs! We had the same grilled pork but instead of eating them with vermicelli noodles, we ate the pork with spring roll wrapper. You dip the spring roll wrappers in hot water and roll the pork with your choice of stuffings. We put cucumbers, lettuce and noodles in with the grilled pork on the spring roll wrappers!
You could also eat the meat with meat too. I love how this meat is so universal, can be eaten with anything basically.
What did you have for Christmas dinner? Were there any left overs like it was Thanksgiving all over again?
