Grilled Peri Peri Chicken, Chips and Cheese Pittas

Today for lunch, I cooked up a storm..well not really. I made Grilled Peri Peri chicken with chips and pitta filled with creamy cheese. It was soo yummy and filling (and obviously not very healthy but I deserved a treat).

I made the chicken from scratch using fresh herbs, spices, salt, lemon juice and Peri peri sauce. I grilled it in my griddle pan on medium heat for about 10 mins only (since the breast chicken pieces were cut fairly small). I also grilled bell peppers, onions and courgettes.

I added chips and cheese pitta bread as a side dish with the chicken. To make the pitta bread, I simply added cheese into the center of the pitta and toasted lightly on the grill. The cheese melts and tastes like a cheese naan..yummy!!

Do you like Peri Peri chicken? How do you make your breads more exciting? I like adding cheese to all my breads lol. Its super unhealthy but tasty.
