This was a dinner I had made a couple weeks back. I seriously have a backlog of posts! I had been on a Purdue Grilled Chicken kick, incorporating it into quick and easy meals. One thing I found I was really enjoying was sauteing up some green peppers and onions with a little bit of sea salt and hot red cayenne pepper. When the peppers and onions were cooked to my liking, I`d add in a 1/2 cup serving of the grilled chicken cuts. Since the chicken was relatively "plain" the cayenne and fresh veggies gave it a nice seasoned flavor.
I`ve made beef fajita pizza`s before so I went ahead and followed that idea with a chicken version. I used pita bread as my base and salsa as my sauce. I then added on some fat free mozzarella to keep the salsa from completely drying out while baking. Once the cheese was evenly spread, I then topped it with my chicken, pepper and onion mixture. I then baked it in a 350 degree oven for roughly 15 minutes until the bread was nice and crispy.
I sliced it up and served with diced tomatoes and lettuce (not pictured), but it was soo yummy. Such a great twist to what would have been a plain meal (grilled chicken salad)!
