Great Side Dish - Roasted Vegetables

Want a healthy and easy to make side dish? I would recommend roasting some vegetables! My favorite lately are these roasted potatoes (mixture of purple/yellow potatoes) and brussels sprouts! All you have to do is clean your vegetables, chop in evenly pieces and grease your baking pan with extra virgin olive oil. Then, spread your vegetables evenly and add your seasonings you would desire (I added dried herbs such as thyme, rosemary and dash of salt/pepper and drizzle extra virgin olive oil). Bake for 35-40 minutes at 400 degrees.
