600g fresh mussels
0,5 dl white wine
6 tails of prawns
350g of spinach
salt and pepper
2 beaten egg yolks
prawns cooked to decorate
Scrape and wash the mussels.
Bring to boil until the wine open.
Drain, strain the broth and reserve.
Discard the shells and reserve the kernels.
Chop the prawns and sauté in butter.
Add the spinach and clean mussels and sauté a few minutes.
Season to taste.
Mix 2 tablespoons (soup) of butter with 1 tbsp (tablespoons) flour and shallow go pouring the milk, stirring.
Stir in the reserved broth and bring to a boil.
Cook, stirring, until sauce boils and thickens start.
Remove from heat and incorporate the yolks.
Barre with butter a baking dish, sprinkle the cooked prawns and cover with sauce.
Gratine in the oven and garnish with cooked prawns.
