Yes, I was off baking again into the middle of the night. My son, volunteered me to bake some cupcakes for his class to celebrate his birthday. Yes, volunteered..lol.. He told the teacher first before he asked me..lol...kids. The reason why I was baking till the middle of the night, well actually until 2:30 in the morning was that I wanted the cupcakes to be as fresh as possible for the kids so that was why I was up so late baking. My neighbors probably thinks that I don`t sleep..haha.. So I made vanilla cupcakes with white buttercream icing. Then I drizzled some melted dark chocolate onto the icing. I used dark chocolate, cause the white buttercream was already sweet and I think dark chocolate balances it out. Then I contemplating whether I should dip the strawberry into chocolate or not but I ended up not dipping them. So I just placed it ontop of the chocolate drizzled vanilled buttercream iced cupcakes and that was it. Simple yet elegant. And anything you do to those cupcakes besides just placing buttercream on it and sprinkles is considered gourmet..lol.. I was told that the kids loved it and there were tons of compliments received and the extra one that was left was eaten by the birthday boy.
