1 medium sized duck, clean
1 tablespoon (coffee) cinnamon
1 tablespoon (dessert) black pepper
2 star anise flowers
6 tbsp (tablespoons) of rice vinegar
1 piece of fresh ginger
1 leek very tender
2 tbsp (tablespoons) cornstarch
Wash and dry the duck.
Tread very well with the cinnamon and star anise crushed pepper.
Pour the spices in a bowl and mix with the rice vinegar and a little salt.
Rub the duck with this seasoning and place on a baking sheet.
Let stand 2 hours.
Sprinkle ginger peeled and cut into thin slices and leek cleaned and cut into julienne.
Duck Bake in oven preheated by placing the pan on the other with boiling water so that the top container does not touch the water.
After an hour remove the duck well drained and cool.

Sprinkle the skin of the duck with the corn starch.
