I found this today on my computer it`s from a couple years ago, I think, and I decided to share it with my fellow luuuxers!
Fried tilapia with a fresh cucumber salsa
Rice and pigeon peas
I first had tilapia in Cuba when I was on vacation and I really liked it. It`s a very versatile fish that can go with anything. It`s also very quick and easy to cook. It takes maybe two minutes at most.
The rice was seasoned with coconut cream and I added pigeon peas when it was almost fully cooked. Pigeon peas have a very earthy taste and are very filling.
Plantain is a large banana looking fruit. But do not confuse it because you don`t want to eat this raw. It must be cooked by either frying it or boiling it. It has a sweet flavor and is really good with spicy food.
