Fried Rice Soup!

It`s very chilly outside today. To complement the weather I made my favorite soup and here`s how:

I used store-bought vegetable broth as my base. I had some left over rice from a couple days ago so I fried those for some crunch as well as a nutty flavor. My choice of protein was chicken. I did the usual marination (soya sauce, corn flour, Chinese salt) and lightly fried it.

You can add the chicken in the broth right after frying, because the warm liquid will extract more flavor from the chicken. I also added a couple of whole chillies and some lemon juice.

I would suggest serving the rice on the side and just putting them into the soup as you go, because otherwise they will loose their crunch.
