Fried rice is definitely one of my go to dinners to make when I am lazy or just don`t have time to make anything else. To me, it is the simplest to make and tastes very delicious. I always try to find any leftover meat or veggies to put in my fried rice so I can use up the left overs for a delicious meal. For this dish, I used fish balls, edamame beans, and corn. The veggies were frozen so it was really simple to just defrost them on the counter for the day. I add egg and rice to the veggies & meat. The key thing to a good fried rice is how good your leftover rice is, haha. I enjoy having slightly hard jasmine rice. I don`t like eating soggy and soft rice. Also, the seasoning is very important.
