I recently read a book at Barnes and Noble about the different kinds of wok Chinese restaurants use to whip up all the amazing dishes they serve to customers. There are some cooks that would go to the extend of buying only hand made woks made by skilled professionals in China. The reason is because the Chinese cooks have long placed an importance in creating dishes that is full of "wok hei", meaning the breath of wok. A good wok gives every dish a unique and distinct smokey flavor and the Chinese believe this can only come from a cooking food in a very heated wok. This plate of fried noodles is exactly what I was hoping for, nice "wok hei" and full of yummy vegetables =)
