Just like rice, noodle is another popular staple among Asians. I especially love the flat noodles, fondly known as the "Char Kuey Tiaw" among Singaporeans and Malaysians. This dish is usually sold on a cart along the streets and is a very affordable dish that comes loaded with bean sprouts and different kinds of meats. The secret behind making a good plate of fried flat noodles, other than using lard, is to have an open flame and big wok so you get charred bits of the noodles. Food connoisseurs often judge a plate of fried flat noodles by how well the noodles are burnt and caramelized. I have a vegetarian version of "Char Kuey Tiaw" today that comes with bak choy, carrots, bean sprouts, eggs and vegetarian ham. Do give this a try if you get the chance!:)
