400g fillets of plaice
salt and pepper
two bulbs of fennel
Start by cutting the fillets with thin strips and cook in a nonstick skillet with a little olive oil.
Season with salt and pepper.
Change the fillets to a plate.
Pour a little more oil to the pan and cook on both sides, the bulbs of fennel peeled and cut into slices.
Make within 4 rings alternating layers of fish fillets and fennel slices sprinkled with chopped parsley.
Bake in a preheated oven for approximately 10 minutes.
Turn out onto plates and serve immediately with cherry tomatoes sautéed in a little olive oil.
Serve with slices of lemon peel.
