Yesterday, I decided to get creative and make my own version of fish cakes.
- 1 large russet potato
- 1 small 170g can of tuna
- 2 eggs
- about a tablespoon of chopped chives
- 1/4 of a green bell pepper, 1/4 a red bell peper
- 1/2 cup of breadcrumbs
So basically what I did was make mashed potatoes with the big Russet potato I had (which are great for making mashed potatoes with by the way). And I put that aside.
In a large bowl, I put my chopped up green and red bell peppers along with the finely minced chives. I added the can of tuna and broke it up with a fork.
I proceeded to pour the mashed potatoes into the tuna/pepper mix, and stirred it around until things were evenly distributed. I wanted to make sure my fish cakes binded properly so I added two eggs and about a cup of breadcrumbs for good measure. I threw in a dash of black pepper, salt, and paprika to taste.
I think at this point it got a little to `wet` so I added a little flour to make it more dough-like.
When everything was mixed together, I heated some canola oil over medium heat and with a spoon, scooped the mixture into small patties. I left them to cook until the bottom was brown and then flipped.
I served with a side of fresh cooked asparagus.
