Filipino Dessert: Ube Macapuno Cake

This Filipino dessert brings me back to all those Filipino parties I`ve been to. Ube is a purple yam locally known in the Philippines. When made into dessert form its quite delicious. It can be used to make a variety of pastries, tarts, cakes, and even ice cream.

Macapuno is a coconut that just has a little but more flesh than a regular coconut. When grated into strips with cooked properly it can be a great topping for all sort of desserts.
