Mini quiche are all time my favorite, these freeze really well in a zip lock bag there are perfect for when guest come around, lunch, or just for snack
ok here the recipe:
24 slice fresh bread crush removed
Butter for spreading
4 egg beaten
1 cup milk
1/2 cup cream or greek yogurt
4 rasher bacon rind removed
1 brown onion finely chops
1 cup grated cheese
Butter the slice of bread and press them firmly down (butter side down) into muffin cases.Bake for 30 minutes in the preheat oven at 180 degree , leave in pans. In the jug combine the egg, cream or greek yogurt. milk, and whisk to combine, fry the bacon and onion until starting to brown divide the milk evenly into the muffin cases. Pour the egg mixture over the top and sprinkle with cheese .Bake for 30 minutes or until golden and puff.
Tips: mini quiche freeze very well allow to cool in the room temperature and seal i the zip lock bag for up to 2 weeks. defrost in the fridge and pop them back in the hot oven for 5 minutes to crisps.
you can add extra your favorite ingredient such a hot dog,spinach,carrot etc
