I was assigned to help with the family turkey this year, and because I knew we were going to have a lot of side dishes to go along with it, I decided to make it a Paleo Turkey with stuffing.
Basically kept the turkey seasoning simple: salt, pepper, garlic, and rosemary. The special part would be covering the entire bird with nitrate free bacon. That`s right, bacon covered turkey!
As for the stuffing, I wanted to keep it light since we were going to have so much food. So I did a vegetable stuffing consisting of zucchini, peppers, onion, garlic, and sweet potatoes. And packed it all together with eggs and almond flour.
Everything turned out so well and we all had a fantastic dinner!
