Espetada, classic Madeira Island dish, recipe is one of the best recipes in the Cook`n & Grill`n collection.
This is my favorite dish, and probably yours if you try it!
This is the recipe according to several chefs:
Beef (200grams per person)
Stone to bash salt, garlic & bay leaves
Board to prepare everything on...
Spit (even better if you have a laurel branch)
Wood burning grill
"Start up fire/BBQ so that you have your embers nice and hot for grilling.
Cut up the beef into square cubes, about 4x4 cms (depending on spit circumference)
Mix Garlic, and Bay leaves and bash them to release flavours.
Add salt and mix ingridientes together to make `espetada rub` and place in bowl.
Do not marinate meat with rub as salt will toughen meat.
Add meat to spit leaving some distance between cubes.
Make sure embers are hot and ready (no flames as they will char meat)
Rub the `espetada rub` on the meat, tap spit to shed excess rub.
Place spit on fire, rotate periodically to grill evenly."
