One of my favorite dishes to eat =) It`s super delicious.
I`m not quite sure where this dish originated from, because I see it a lot at All you can eat Japanese restaurants but most of them are opened by Chinese people and I rarely see it on a regular menu in a Japanese-owned Japanese restaurant.
Enoki mushrooms are the white mushrooms with very long stems and the caps are tiny. You cut the bottom part off because its mostly dirt and you end up with a 2 inch long bundle of enoki mushrooms. Once washed, you just bundle a few together and wrap them in sliced beef.
The beef was first marinated in kalbi sauce, so the taste is similar to that of Korean short ribs. Once marinated and wrapped around the enoki mushrooms, it is then grilled together in a bundle.
You end up with a very rich and savory dish. The enoki mushrooms absorb a lot of the beef taste. It also provides a nice crisp texture to the beef.
The only problem I have with eating it is that the strands of enoki stems get stuck between my teeth. It`s better to eat them horizontally full than bite them in half vertically.
