Elk Pasta

Here is another photo of the food I bring to work. I get a lot of compliments because of my colorful lunches.

This was a grilled zucchini, broccoli and shrimp elk pasta made with almond milk. I have learned that, with the microwaves at work, it`s not a great idea to have heavy cream on the pasta as it turns to mush. So I like making dry pasta by boiling the sauce into the pasta. This way, everything is still intact.

It`s about 250 calories and a good 8 grams of fibre due to the whole grain pasta and the vegetables.
