Eggs and Hash Browns
When I am having a lazy Saturday or Sunday, and I have slept in (like I did today lol), I like to prepare myself my favourite brunch dish, Hash browns with Sunny Side Up eggs.
Its a great meal for brunch because it fills me up till dinnertime, and is really easy to make.
Just take 1 medium size potato and peel it before grating it. Next add some salt and pepper to the grated potato, as well as some vegetable or olive oil. In a medium sized pan, cook the potato on medium heat making sure to flatten the potato as much as possible. Once golden brown on one side, flip it over (carefully, this may be a little tricky) and cook the other side until again, it is golden brown. Once cooked, transfer the hash browns to a plate and use to same pan to cook an egg (or 2, whatever you want), sunny side up.
Once cooked, you can eat the egg with the hash brown. I like it when the yolk is still a little runny, and the potato soak up the runny yolk....mmmmm
I usually mix this with a little bit of homemade salsa that my mom makes which is basically tomatoes, green bell peppers, celery and some hot sauce and seasoned with salt and pepper, but since she didnt make any this week, I just sliced some tomatoes to eat with it (not pictured)
