Eggplant Pasta

Just recently Shannon did a post where she explained she saw eggplant and decided to mix it into some pasta. That immediately had me craving some. I decided to quickly whip something up at the end of last week.

Basically, I cut up the eggplant into cubes and put it into the oven to bake up. I simply coated it with olive oil, salt, and pepper. Then I combined the eggplant (once roasted) into a jar of pasta sauce (THIS is where I would change the next time. I would make my own sauce. The Prego jar I used was just too...sweet, I suppose.) I also had boiled off some ziti pasta and combined that to the mix. The final thing I did was cube up some fresh mozzarella cheese and mix that in with everything. I really liked it when the mozzarella first went in because it wasn`t completely melted down so I`d get little bites of mozzarella cubes... but, ultimately it melts down and becomes stringy cheese (which is still very good). I also did top my individual bowl with some parmesan cheese.

I thought this was good but like I mentioned, I wouldn`t use jar sauce again. My own homemade sauce would have been so much better and a nicer compliment to the flavors. It would have had a much fresher taste to it.
