1cup Progresso® panko crispy bread crumbs
1teaspoon crushed red pepper flakes
Salt and pepper
1medium eggplant, peeled, cut into thin strips
1.turn oven on to 450
2. in a bowl mix bread crumbs pepper flakes salt and pepper.
in a different bowl beat an egg. then dip the eggplant in the egg then coat with the cread crumbs.
3. bake for 20 mins or until golden brown
