This is one of the dishes I had for dinner tonight. It`s a really simple and delicious dish. It`s pan fried egg with chinese chives. You could get the flat chives or the more round ones with the unopened flower buds. Just crack some eggs into a big bowl and stir. Then add a dash of salt or to taste. Clean and wash the chives and chop to small pieces. Add to the eggs and mix thoroughly. Heat up a frying pan, add a little bit of oil. When hot pour some of the egg mixture onto the pan and turn to low-med heat. After a min or so flip over and cook the other side and your done. Delicious with rice or over noodles. You can just even eat it like is.
