I made these egg muffins over the weekend. I used paper muffin liners, cooking spray, eggs, ham and some veggies. Just mix it all together (12 eggs) and pour into the muffin cups and bake at 375 for 20 minutes until the tops are golden. They microwave really well and make for a nice filling breakfast. I like to top mine with sour cream and hot sauce. The only thing I would do differently next time is use foil muffin cups. The paper ones cooked to my pan apparently because I didn`t use enough cooking spray. They have been soaking for 2 days in my sink and I think I will just have to throw the pan out and get a new one. Also, they left a kind of hard edge on the egg muffins. Hopefully the foil muffin liners will fix this problem or else I will get a silicone muffin pan and see if that helps this problem. It is easy to store them in a ziplock bag and them pop them in the microwave!
